2 teaspoons Flaxseed Meal
2 tablespoons Water
1 cup Teff Flour
1 cup Organic Steel Cut Oats
1/2 teaspoon Sea Salt
1 teaspoon Ground Cinnamon
1/2 teaspoon Ginger
1/4 teaspoon Nutmeg
3/4 cup RAISINS - DRIED UNSULFURED
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
3 Bananas (very ripe and mashed but leave some chunks)
3 tablespoons Honey
1/2 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract
3/4 cup Applesauce
Gluten Free, High Fiber, Lactose Free, Low Cal, Low Fat, Soy Free.
Can substitute 1 egg in place of the 2 tsp flaxseed meal and 2 tbsp water in this recipe.
Pre-heat oven to 375°F.
Mix ground flax seed with two tbsp of water and set aside.
Mix flour, oats, salt, spices, raisins, baking soda and baking powder together.
Mix together bananas; make sure to leave some chunks. Then add honey, vanilla extract, almond extract and applesauce.
Add Flax "egg" to wet mixture.
Add wet ingredients to dry, mix together.
Put parchment paper on baking pan and scoop about three tbsp of cookie dough onto pan. These cookies will rise a little but not much, make sure to shape the way you desire, they stay pretty much the same size as you form them in beginning.
Bake for 13-14 minutes, take out and place on wire rack to cool. Banana pieces will be extremely hot for about 5 minutes.
